1.准备食材。

2.干豆腐用热水煮一下,去除豆腥气并且增加柔韧性。

3.独头蒜去皮切开,没有独头蒜普通大蒜也行。

4.把大蒜打碎,略带颗粒感,做这个肉卷一定要突出蒜香味,这是这道菜的秘诀。

5.一个鸡蛋打散。

7.把鸡蛋液、大蒜碎、土豆淀粉倒入肉馅中。保留少许鸡蛋液做肉卷封口用。

8.顺时针搅拌上劲。

9.把干豆腐铺开,在上面铺满肉馅。

10.在肉馅末端抹鸡蛋液。

11.从头卷起。

12.卷好后把有鸡蛋液一面朝下,放入蒸锅。

13.开锅后煮十五分钟。

14.蒸好后倒掉锅中的水,油纸(或者锡纸)上放少量糖和茶叶。

15.肉卷表面刷油。

16.开大火加热,锅内冒烟熏一分钟即可。

17.取出晾凉。

18.切片装盘。
小窍门&温馨提示
1、独头蒜味道比普通大蒜更浓郁,制做肉卷大蒜少了就不是吃香肠的口感了。
2、如果为了健康,可以不用烟熏那一步,直接蒸熟即可。
